Meet Erin Cahill, Pallottine head chef. Read about her passion for cooking, her positive attitude and her favorite inspirational quote that might surprise you.
Tell us a little bit about yourself.
I am from Peoria, Illinois. I have an older brother who lives in Chicago with his wife and my nephew, Charlie. I have a younger brother who lives here with his wife and my nephews George and James, and my niece, Lucy. My parents live in Council Bluffs, Iowa, but hope to retire to St. Louis in the near future. I also have an 80-lb. Weimaraner named Libby.
I went to Saint Louis University where I majored in elementary education. I taught for 12 years. While teaching, I decided I wanted to be a chef, so I went to culinary school in the evenings.
What is your position at Pallottine and how long have you been here?
I have worked here for almost two years, and have been the head chef for a little over one year.
What gifts you bring to your work at Pallottine?
My cooking skills! I love to be creative and find new ways to make our guests happy. I have always loved hospitality and throwing parties, big or small. I feel like I get to do that every day with planning menus and cooking. Also, I am a generally a very positive person, and I think that comes across to the staff and our guests.
Why do you think Pallottine Renewal Center is an important ministry?
It gives people a chance to get away from the craziness of everyday life. We provide everything they need for their stay, so they can truly focus on having a great experience.
How do you see your work as a part of this ministry?
Providing meals is a large part of hospitality. That is a major thing that people don’t have to worry about. They know they will get served three meals a day. We feed their bellies, while they feed their souls.
What does Pallottine’s motto, “Refresh, Reflect, Renew” mean to you?
This is such a great place to get away from everything. I never knew PRC existed until the first time I came to work, and I am so glad I found it! I went on many retreats when I was younger and I know what a wonderful, reflective experience they can be. People can spend a few days here and hopefully leave with a new energy.
What are some of your favorite experiences at Pallottine?
Some of my favorite experiences are simply hanging out with the staff on our breaks or downtime. We love to chat and laugh together!
What are your passions and aspirations?
My passion is food! I obviously enjoy cooking, but I truly love making food for people. I also love to eat and try new recipes or restaurants.
I am also very passionate about my family and friends. I’ve got a great group of both and enjoy every minute I get to spend with them.
What do you like to do in your spare time?
I like to spend time with my family and my friends. I love to go to Cardinals games, Billiken basketball games and watch most sports. I enjoy working out and swimming and I watch way more Netflix than I care to admit!
Is there a quote that inspires you?
I have a quote by Tina Fey hanging on my bedroom mirror. It says, “You can’t be that kid at the top of the water slide, over thinking it. You have to go down the chute.” I came upon this quote at a point in my life when I needed a change. I like to look at it and remember to take chances and to not be afraid to try something new.
